Ingredients
- 4 large orange bell peppers (look pumpkin-y)
- 1 lb ground chicken, turkey, or beef
- 1 cup cooked rice (white, brown, or cauliflower rice)

- 2 garlic cloves, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 cup spinach or kale, chopped (optional greens boost)
- 1 cup shredded mozzarella or Monterey Jack cheese (save a little for topping)
- 2 tbsp tomato paste
- 1 tsp smoked paprika

- 1 tsp cumin

- Salt & pepper, to taste
- Olive oil, for cooking
Instructions
- Prep the peppers: Slice off the tops and remove seeds/membranes. Use a small paring knife to carve fun jack-o’-lantern faces into the peppers. Lightly brush the insides with olive oil.
- Cook the filling: In a skillet, heat a little olive oil. Sauté onion and garlic until soft. Add the ground meat, cook until browned. Stir in tomato paste, diced tomatoes, spinach, rice, and spices. Cook until combined. Remove from heat, stir in cheese (save some for topping).
- Stuff the peppers: Spoon the mixture into each carved bell pepper. Place in a baking dish, sprinkle a little extra cheese on top.
- Bake: Cover with foil and bake at 375°F (190°C) for 25–30 min until peppers are tender. Remove foil for the last 5 min to melt and brown the cheese.
