Ingredients

  • 6 medium russet or gold potatoes, peeled, and diced (2 lbs)
  • 4 slices thick cut bacon
  • 1 tbsp avocado or olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 3 tbsp flour
  • 4 cups low sodium chicken broth
  • 1 cup unsweetened almond milk or low fat milk (or half & half for richer flavor)
  • Salt and pepper, to taste
  • Optional: 1/2 cup greek yogurt or light sour cream

Instructions

  1. Cook the bacon, remove with slotted spoon, set aside. Leave 1 tbsp bacon grease in pot.
  2. Saute aromatics: add diced onion and cook until soft, add minced garlic and cook until fragrant.
  3. Make the roux: sprinkle in the flour, stirring for 1 minute to form a paste
  4. Add broth and potatoes: gradually whisk in chicken broth until smooth. Add diced potatoes. Bring a boil, then reduce heat and simmer uncovered 15-20 minutes, until potatoes are fork tender
  5. Mash & thicken: using a potato masher, mash some of the potatoes directly in the pot (leave some chunks for texture). Stir in milk and simmer 5 more minutes. Adjust thickness with more milk or broth if needed.
  6. Make it creamy: Cut the heat, stir in sour cream. Season with salt and pepper
