Ingredients
- Kale, stems removed and roughly chopped
- 1 Honeycrisp apple, thinly sliced
- Walnuts, crushed
- Lemon Vinaigrette:
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and prep your kale, removing stems and roughly chopping.
- Thinly slice the apple and crush the walnuts.
- In a large mixing bowl, add the kale and half the lemon vinaigrette. Massage the kale with your hands until it reduces by half in size.
- Add the apple slices, walnuts, and remaining vinaigrette. Toss gently to combine.
