Fresh, crisp, and full of flavor. This Kale, Walnut & Honeycrisp Apple Salad is perfect for a light lunch or a healthy side. Tangy lemon vinaigrette brings everything together beautifully!

Ingredients

  • Kale, stems removed and roughly chopped
  • 1 Honeycrisp apple, thinly sliced
  • Walnuts, crushed
  • Lemon Vinaigrette:
    • 1/4 cup lemon juice
    • 1/2 cup olive oil
    • 2 cloves garlic, minced
    • 1 tsp Dijon mustard
    • 1/4 tsp salt
    • 1/4 tsp black pepper

Instructions

  1. Wash and prep your kale, removing stems and roughly chopping.
  2. Thinly slice the apple and crush the walnuts.
  3. In a large mixing bowl, add the kale and half the lemon vinaigrette. Massage the kale with your hands until it reduces by half in size.
  4. Add the apple slices, walnuts, and remaining vinaigrette. Toss gently to combine.
  5. Serve fresh and enjoy!
