Ingredients

  • Wheat noodles
  • 2 eggs
  • 1/4 cucumber, julienned
  • 2 cloves garlic, minced
  • 1 stalk scallion, chopped
  • 1 tbsp cilantro, chopped
  • Chili oil, for garnish

Sauce Ingredients

  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp black vinegar
  • 1 tbsp sesame oil
  • 1 tbsp water
  • 1 tbsp sugar
  • 1 tsp salt

Instructions

  1. Cook noodles according to package instructions.
  2. Chop scallions, cilantro, mince garlic, and julienne cucumber.
  3. Beat the eggs and cook in a pan over medium heat to create a circular omelet. Slice into ribbons.
