Ingredients
- Wheat noodles
- 2 eggs
- 1/4 cucumber, julienned
- 2 cloves garlic, minced
- 1 stalk scallion, chopped
- 1 tbsp cilantro, chopped
- Chili oil, for garnish
Sauce Ingredients
- 3 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tbsp sesame oil
- 1 tbsp water
- 1 tbsp sugar
- 1 tsp salt
Instructions
- Cook noodles according to package instructions.
- Chop scallions, cilantro, mince garlic, and julienne cucumber.
- Beat the eggs and cook in a pan over medium heat to create a circular omelet. Slice into ribbons.
- In a bowl, combine peanut butter, soy sauce, black vinegar, sesame oil, water, sugar, and salt. Mix until smooth.
