Tender ribeye, chewy udon noodles, and bold black pepper sauce come together in this quick, flavorful stir-fry that’s perfect for weeknight dinners
Ingredients
- 6 oz ribeye, thinly sliced
- 1/8 white onion, thinly sliced
- 1 stalk green onion, chopped on a bias into large 1–1.5″ pieces (separate white and green parts)
- 1 packs udon noodles
- 2 cloves garlic, minced
- Black pepper — more than you’d think (freshly cracked)
- 1/2-1 tbsp oyster sauce
- 1/2 tbsp soy sauce
- 1–2 tsp neutral oil
Instructions
- Prep the udon — Boil noodles according to package directions, then drain and set aside.
- Cook the meat — Heat oil in a skillet or wok over medium-high heat. Add ribeye and sear until just cooked through, about 1–2 minutes. Remove from pan and set aside.
- Sauté aromatics — In the same pan, add white onion and the white parts of the green onion. Cook for 1 minute, then add garlic. Sauté until fragrant.
- Build the stir-fry — Add udon noodles, oyster sauce, and soy sauce. Toss to coat evenly.
- Finish with beef & pepper — Return the ribeye to the pan, add a generous amount of black pepper, and toss to combine.
- Serve — Remove from heat, garnish with the green parts of the green onion, and serve immediately.
